How to order steak like an expert:
The 2 most important things to consider are the cut and the grade of meat. You always want a steak that USDA Prime, or USDA Choice. Anything else doesn't have enough fat marbling, giving it flavor. That means that fillet mignon isn't actually the best cut, since it's relatively fat free. The most flavorful steaks are bone-in cuts of meat. Those steaks are juicier and they have more flavor because the marrow in the bone is released during cooking.

Bone-in New York Strip or Kansas City Strip steak
Rib eye (bone-in)
Porterhouse
